饭豆 (Vigna umbellata (Thunb.) Ohwi & Ohashi)是一种尚未被充分开发利用的豆类,具有重要的营养保健价值,开发前景广阔。本研究对410份饭豆核心种质的蛋白质、淀粉、总黄酮和总多酚四种主要营养成分的分析结果显示,供试材料的蛋白质含量范围为15.9%-28.2%(平均21.0%),淀粉含量范围为40.0%-53.7%(平均45.8%),总黄酮和总多酚含量范围分别为1.34-7.39 mg RE/g(平均4.10 mg RE/g)和0.80-2.90 mg GAE/g(平均2.19 mg GAE/g)。进一步筛选出34份代表性种质开展广泛非靶向次生代谢物分析,共鉴定出12类607种代谢物。不同地理来源种质在黄酮类、氨基酸及其衍生物、生物碱和萜类等主要代谢物的组成比例上存在差异,其中中国和缅甸种质中黄酮类占比最高 ,分别为19.0%和19.7%,而泰国和老挝种质中氨基酸及其衍生物更为丰富(20.1%和18.3%)。本研究为饭豆优质种质资源的评价、挖掘及育种利用提供了数据支撑。
Rice bean (Vigna umbellata (Thunb.) Ohwi & Ohashi)is an underutilized legume crop with considerable nutritional and health-promoting potential, offering broad prospects for development. In this study, we analyzed four major nutritional components—including protein, starch, total flavonoids, and total polyphenols—in 410 core rice bean accessions. The results showed that protein content ranged from 15.9%-28.2% (mean: 21.0%), starch content ranged from 40.0%-53.7% (mean: 45.8%), while total flavonoid and total polyphenol contents ranged from 1.34-7.39 mg RE/g (mean: 4.10 mg RE/g) and 0.80-2.90 mg GAE/g (mean: 2.19 mg GAE/g), respectively. Based on these results, 34 representative accessions were selected for extensive non-targeted metabolomic analysis, which identified 607 metabolites classified into 12 major categories. The composition of key metabolites classes—such as flavonoids, amino acids and derivatives, alkaloids, and terpenoids—varied among accessions from different geographic origins. Notably, flavonoids were most abundant in accessions from China and Myanmar (19.0% and 19.7%, respectively), while those from Thailand and Laos had higher levels of amino acids and derivatives (20.1% and 18.3%, respectively). This study provides valuable data to support the evaluation, exploration, and breeding utilization of high-quality rice bean germplasm resources.
